Breakfast Casserole Muffins

I pound sausage, browned and drained
6 eggs
1 cup Bisquick
2 cups half-and-half
2 cups grated cheese
salt and pepper


Place drained sausage evenly in muffin tins, sprayed with cooking spray. Mix eggs, Bisquick, half-and-half, salt and pepper. Pour evenly over the sausage. Top with grated cheese. Bake for 25 minutes in a preheated 350 oven. Makes approximately 24 muffins. These freeze well too.
